kushari my love

quick update and then onto the food!

we are moving next weekend, to a town that has a smaller population now than it did in 1880′s.

proudly bringing the commune back where it belongs.

on that note, alex is back home! woot .-. ._. .-. cartwheels anyone?
i’m working in the kitchen at buffalo bistro on the weekends! i love it so.
saw the tallest man last weekend,  super fantastic! i don’t think any of you have been to kilby court in slc. it’s a really great venu..but oh so very wee. we got there just as he started playing and could not see a thing. although he sounds quite tall, he is not. kelly turns to alex and says ‘you wanna go to the front?’ they giggle and take off. minutes later kelly comes back and says grab everyone! i turned and snagged annie’s hand and followed kelly into the very crowded mass. only to find that for some reason there was a very large empty space right next to the stage! feet away he stood, i tell you! she ran back during the next break to grab clint and willie. as she pulled willie through and he saw the vastness he said you are fucking kidding me! kristian (yeah we were so close we are now on a first name basis) was leaning over his amp at the time. he looked up smiled, winked and waved. ha! fantastic indeed. then he covered graceland by simon and garfunkel. one of my very favorite songs and i must say he did it justice. met some new friends in the parking lot afterwards and were surrounded by some of our favorite company even if it was for a very short time. as usual not enough time anywhere. had a very good dinner and just as good breakfast at mom and dad’s. rhubarb blackberry cobbler.. mmm.. such a good weekend.
man i wish i was not in a hotel room in phoenix dreaming of african food. it smells like a giant indoor swimming pool here…ugh.

this may seem daunting. it is so worth it.

KUSHARI
equal parts rice, brown lentils and pasta. you can use any shape pasta you want, i like macaroni noodles for some reason. you can also use brown rice. all of these should be cooked and then tossed together. i make enough to feed an army with 3-4 cups each.

tomato sauce

at least 2 tbs olive oil
2 onions
7 cloves garlic
1-2 chopped spicy peppers or red pepper flakes to taste
1-2 tsp cumin
1 jar chunk tomatoes or big can
1 14ounce can tomato sauce
2 tsp vinegar of your choice
salt and pepper to taste
2 tbs lemon juice

saute onion, garlic, and cumin. let the garlic brown just a little. throw in the tomato whatnot, peppers and vinegar.
low simmer 1hr. squeeze a little lemon just before serving.

vinegar/garlic sauce

1 tbs olive oil or margarine
5 cloves garlic
2 tbs vinegar
1/4 cup broth or cooking liquid from your lentils
lightly brown the garlic add vinegar and broth, cook ten minutes. salt and pepper if you like.

crisp up 3 thinly sliced onions. i slice mine throw them in a little soy milk for a few minutes, drain and then put about 1/2-1 of flour on top. fry or bake until crispy.

lentil business on bottom with tomato sauce and a little of the vinegar garlic, crispy onions and then squeeze fresh lemon on the very top.
with a green salad with lots of kale, tomatoes, cucumber and a simple lemon vinegarette on the side. with lots of cracked black pepper.

    Yeah for a new post!

Technically Graceland is by Simon alone…and that’s all I have to say about that.

Also, yeah for the revival of the commune in a city with two dummies on lookout in sheriff vehicles!

I’d like to take a vacation to your commune.

Thank you so much for posting this – I’m glad you finally had enough of some downtime to give in to my pestering. Will be making for our foodie-friends as soon as possible! Yum. Yum.

  3. Mom Says:

Thanks for the recipe although I probably won’t make it until it cools off a little—meanwhile, hooray for barbeques!
